Too many people have no idea how steak cooks. Which is fine, if you’re kind enough to ask or describe the way you want it cooked. But I once served a customer at a restaurant that ordered a medium steak. When I delievred the steak, she rudely asked, “why is there pink in it? I ordered it medium!” Absolutely insufferable. Shortly afterwards, the restaurant provided cards that show steak temps to avoid such an encounter.

The discussion about how to cook steak has been “medium rare is the best way to cook steak” for a long time now, so I think a lot of people just assume what ever doneness they like their steak cooked to must be “medium rare”.

The image would best be described as Blue, and it’s fine to take a steak blue if that’s what you prefer.

I know nothing about cooking steak…but am I right to assume it should not be red in the middle? Pink I can understand but this steak just looks straight up raw in the middle.

For rare it’s fine to be red in the middle. Given how much it’s cooked on the outside it’s likely either this person fucked up, or the color balance was messed with, as it shouldn’t be quite that red when you already have grey forming way past the crust like that.

Pink is what you get at medium temps. If it’s pink in the center, you’ve hit medium, if it’s still a bit red in the center, you’re at medium rare and did a good job for most steak eaters; assuming you limited the amount of grey formed during the sear.

If this is unedited, they went for rare but didn’t cook it enough and tried to fix it by searing it too long, so its slightly over cooked on the outside and slightly under cooked in the center compared to a perfect example of rare.

Since I moved from England to Canada, every time I order a steak medium rare they give me medium at best.

So, the interior of steak being raw is fine. Due to the nature of it, it’s unlikely there will any pathogens inside of it, perhaps on the outside because it is exposed and could have been contaminated, but the interior is safe due to being… well not being exposed. Of course there are exceptions but generally it is safe so long as the exterior has been cooked to a point where any pathogens are dead.

Ground beef is another thing entirely since any contamination that was on the outside has been mixed in, and thus it should be cooked through thoroughly.
