There are acrylic gouaches and even acrylic inks, that paint like watercolor but dry to be waterfast!

and heavy body acrylics and high flow acrylics and “so flat” acrylics… and acrylics mediums and so on.
As you mention, the “Waterproof once dry” is its main advantage - so you can paint extra layers on top or paint over mistakes etc.
