You’ve got to add a bit more pasta water and let the oil and starch emulsify so the sauce sticks to the noodles a bit more.
Made pesto again

Used more olive oil relative to water and used my pasta water instead of normal water. I also added some sun dried tomato to the pesto and found it tp be pretty tasty.
Looks fantastic getting that sauce to emulsify is a game changer.
Never quite understood that. Looks perfectly sticky to me. “Don’t drain all the pasta water”. Yeah I plan to throw it back in the pan on the stove, so I will need some juice to cook it while I drench it in hot sauce. Perhaps I don’t know what I’m doing.
The shape of trompetti makes it sort of unnecessary as the pesto gets scooped by it but I do agree I should have added more. Tasty either way
