My absolutely favorite cold beetroot soup for hot summer! Tried it in Lithuania on my vacation few years back and it was love at first sip. It is called Šaltibarščiai (sorry if I misspelled something I’m not Lithuanian:)). It’s fantastic!

A refreshing summer staple, yours look delicious. Did you try žemaitiška šmakalas, cold kefir herring soup, while you were there?
