My Pathfinder group does a potluck for game. This week I did not have a lot of time to cook, my dog had knee surgery and I have to keep a constant eye on her.

The food bank where I volunteer has been getting a lot of frozen peaches, so I made Peach Poundcake. Still trying to decide if I should glaze it.

recipe

Peach Pound Cake

Prep Time: 20 min | Cook Time: 60 min | Total Time: 1 hr 30 min | Servings: 1 (10-inch) cake

Ingredients: 2 cups white sugar
1 cup butter, softened
4 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour, divided
1 teaspoon baking powder
½ teaspoon salt
2 cups fresh peaches, pitted and chopped (I used frozen, it was about 1 1/2 lbs, I defrosted them slightly and then pulsed them in my food processor)

Directions: Preheat the oven to 325 degrees F (165 degrees C). Butter a 10-inch tube pan and dust with white sugar. Beat sugar and butter together in a mixing bowl with an electric mixer until light and fluffy; add eggs, one at a time, beating well after each addition. Stir in vanilla. Sift 2 ¾ cups flour, baking powder, and salt together into a bowl; gradually stir flour mixture into butter mixture. Place remaining 1/4 cup flour into a small bowl. Add peaches and toss to coat, then fold floured peaches into batter. Spread batter evenly into the prepared pan. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 60 to 70 minutes. Cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.

I tried grabbing a picture, but it is totally dark in the kitchen, so my cameras was not focusing on the cake.

Also since i used frozen peaches it was a little wetter than if I had used fresh. I typically underbake so stuff does not dry out, this was almost undercooked. I finished rather late and had to cover it before it was fully cool, which added a little gummyness to it. Install it was really good though.

For last week’s StarFinder game I made peach crisp, one of the players hates peaches and he ate more than anyone else!

That recipe needs tweaking, and probably should have had oats in the topping (but then it is a crumble I think).

That looks good! I made an apple crisp a few weeks ago to use up some apples about to go bad. The picture is on my old phone though lol. Idk if my topping works for yours but mine is:

1 egg 1 cup flour 1 cup sugar 1 tsp baking powder 1/2 cup melted butter

Mix dry ingredients, pour in butter and mix as well as you can, add in egg and I squish it by hand to make sure it’s really mixed in. It would be kinda dry but not super dry.
