Something about those slight tempo variations that you just can’t program into a click track spontaneously gives it that extra bit of bite to me.
And even a certain amount of sloppiness in playing sometimes. If it’s not too much I find it a plus for some styles.
So if you know any bands or albums that really stand out to scratch that itch, please share.

My recommendation is Sepultura - Beneath the Remains (1989).
The next few albums I think are great though they steadily move away from the thrash you’re describing.
Oh beneath the remains and chaos AD are some my all time favourites. I think chaos was in fact my very first metal album (on tape no less).
Beneath and Arise are like two halves of a double-album, the best Sepultura have released.
Arise is my absolute favorite of their albums.

Early Venom, Bulldozer, Bathory’s self-titled, Sodom’s In The Sign Of Evil EP, Celtic Frost, Schizophrenia (Colombia), Witchtrap - if you are after something with a blackened twist.
Znowhite, Exciter - for more of a speed metal vibe.
Cryptic Slaughter, Excel, D.R.I., Carnivore’s Retaliation - for some crossover (thrash/hardcore punk fusion).
Whiplash, Hallows Eve, Sepultura’s Morbid Visions, Onslaught, Razor, Sodom’s Masquerade in Blood, Tankard’s Zombie Attack, Voivod’s War and Pain - if you are after some old-school goodness.
Violator, Lich King - newer, but stiff raw af and will kick your ass back to the 80s.

Well a thing I’ve been looking for and have yet to find in particular as wel is albums like Exhorder’s slaughter and the law. Most people immediately refer to pantera but I find that comparison somewhat misplaced (even though very understandable, it’s def there).
Pantera kind of tends to go for a bit more of a pentatonic/blues scale approach to their composition where Exhorder is very, let’s call it, a mixture of dissonance and “chromatic” things most of the time. Pantera is a bit more 50/50 and easier on the ear imo.
But anyways you get the idea. (Thx btw loving the feedback here)

Hexen - State Of Insurgency Excellent thrash album. Melodic, yet punishing riffs. Production is not slammed to the grid or hyper edited.
Coroner - No More Color Retro progressive/technical thrash. Unbelievable band. One of my fav favorites of all time.
Holy Terror - Mind Wars High velocity thrash. Good shit. Feels like its moving so fast the wheels are gonna fly off at any second.
Demolition Hammer - Tortured Existence This one’s a banger for sure. Killer vocalist too. Another one of my favourite bands.
The new coroner is outstanding
There was a Norweigan black/thrash band that channels a lot of Kreator in their vibe that you might enjoy: they’re called Byfrost. Check out their “Black Earth” and “Of Death” albums.

Grove Street, Enforced, Pest Control, Guilt Trip, DYNAMITE
Hellripper (with a slightly blackened edge), Pest Control (crossover for a slightly DRI style) and you can’t go wrong with BoltThrower or Sabbat (UK).
Onslaught is band from the early days of thrash and still sounds like it.
The new Mr Bungle album is an excellent return to thrash.

Raw, mid-90s, thrash from Perth, Australia.
This album was killer.
Playing Club O, Big Day Out, supporting Sepultura at the Freo Passenger terminal '94, and reforming to play a note-perfect set at the Charles in 2022, these guys are the thrash real deal.
Overkill Taking Over is along these lines. Dew Scented first 4 albums are worth checking out as well. Some others who may be less known:

Humm… off the top of my head… Annihilator - Alice in Hell was a good one, all their stuff probably. Anthrax was always a favorite and can’t be mentioned enough tbh, Among the Living, State of Euphoria, Persistence of Time. Gold. Exodus as well. King Diamond is amazing if you like storytelling and crazy vocals.
Not exactly a deep cut but Testament is a band that I kind of glossed over growing up, to my own detriment.
On the other hand, I was one of those weirdos who really got behind John Bush (Armored Saint) joining Anthrax. Dude is in my top 5 metal vocalists.
If you want shitty, sloppy drums… there’s really no one like Lars.
(Also I’ll mention Municipal Waste since no one else has…)
